  • 3/4 Granny Smith apple (chopped)
  • 1 cup red grapes (halved)
  • 1/2 cup pecans (toasted)
  • 1/3 cup mayonnaise
  • 3 tablespoons Greek yogurt
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill (chopped)
  • 4 croissants
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon kosher salt
  • 1/3 cup red onion (finely chopped)

Instructions

  1. Preheat the oven to 400°F.
  2. Spread the pecans on a baking sheet and toast for 8-10 minutes until lightly browned. Allow to cool then chop.
  3. In a large mixing bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, fresh dill, salt, and pepper.
  4. Add the chopped chicken, grapes, apple, red onion, and toasted pecans to the dressing. Mix gently until well combined.
  5. Slice croissants horizontally to create pockets and fill each with the chicken salad mixture.
