- 3 cups cooked chicken (chopped or shredded)
- 3/4 Granny Smith apple (chopped)
- 1 cup red grapes (halved)
- 1/2 cup pecans (toasted)
- 1/3 cup mayonnaise
- 3 tablespoons Greek yogurt
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill (chopped)
- 4 croissants
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon kosher salt
- 1/3 cup red onion (finely chopped)
Instructions
- Preheat the oven to 400°F.
- Spread the pecans on a baking sheet and toast for 8-10 minutes until lightly browned. Allow to cool then chop.
- In a large mixing bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, fresh dill, salt, and pepper.
- Add the chopped chicken, grapes, apple, red onion, and toasted pecans to the dressing. Mix gently until well combined.
- Slice croissants horizontally to create pockets and fill each with the chicken salad mixture.
