  • 2 Persian cucumbers
  • 5 celery stalks
  • ½ medium fennel bulb
  • ¼ cup fresh flat-leaf parsley, finely chopped
  • ¼ cup fresh dill, finely chopped
  • 2 Tablespoon fresh mint, finely chopped
  • 2 Tablespoons extra virgin olive oil
  • Zest of one small lime
  • 1 teaspoon fresh lime juice
  • ½ teaspoon fine salt
  • Pinch of pepper
  • ½ cup raw almonds
  • 1 Tablespoon extra virgin olive oil (for almond spread)
  • ¼ cup filtered water
  • 1 ½ Tablespoons lemon juice
  • ¼ teaspoon fine sea salt

Instructions

  1. Bring a small saucepan of water to a boil. Add the almonds to the boiling water, turn off heat, cover and let sit for 15-20 minutes.
  2. Drain in a colander. Remove the almond peels by squeezing each almond firmly at the base until the skin pops off.
  3. Add peeled almonds and the rest of the almond spread ingredients to a blender or food processor. Process until smooth, adjusting with more water if necessary. Cover and chill until needed.
  4. Thinly slice the cucumbers, celery, and fennel using a mandoline or sharp knife.
  5. In a large bowl, combine shaved cucumbers, celery, fennel with chopped parsley, dill, mint, olive oil, lime zest, lime juice. Season with salt and pepper to taste.
  6. Spread almond spread onto a plate, top with the vegetable medley, and garnish with sliced almonds and an extra pinch of sea salt if desired.
