  • 1/2 cup Dried Cranberries (or golden raisins/diced dates)
  • 1/4 medium Red Onion (finely diced)
  • 1 cup Pecans (or walnuts)
  • 2 tablespoons Maple Syrup
  • 2 tablespoons Red Apple Vinegar (or apple cider vinegar)
  • 1 tablespoon Lemon Juice (fresh is best)
  • 3 tablespoons Tahini (or Greek yogurt)
  • 1 teaspoon Dijon Mustard (or whole grain mustard)
  • 1/2 teaspoon Garlic Powder (or fresh minced garlic)
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Sea Salt (to taste)

Instructions

  1. In a skillet over medium heat, toast the pecans with maple syrup until caramelized (about 5 minutes). Let cool.
  2. Wash and chop celery into bite-sized pieces, dice the apple, and finely chop the red onion.
  3. In a mixing bowl, whisk together tahini, maple syrup, red apple vinegar, lemon juice, Dijon mustard, garlic powder, onion powder, and sea salt until smooth.
  4. In a large bowl, combine chopped celery, apple, cranberries, red onion, and cooled pecans. Drizzle dressing over the mixture and toss gently to coat.
