- 16–20 frozen dumplings (vegetable or protein-based)
- 2 bok choy bulbs
- 1 zucchini
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or sugar
- 1 teaspoon sesame oil
- 1 large garlic clove
- 1 small cube of ginger
- Optional garnishes: sesame seeds, sliced green onions, cilantro
Instructions
- Preheat oven to 400°F (200°C). In a large baking dish, combine coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil; whisk until smooth.
- Grate in garlic and ginger. Chop bok choy and zucchini; stir into the broth mixture.
- Add frozen dumplings in a single layer without overlapping. Press them slightly into the broth and cover the dish with foil.
