  • 500 g beef mince
  • 1 onion, chopped
  • 1 tsp mild chili powder
  • 1 tsp sweet smoked paprika
  • 2 tsp ground cumin
  • 1 tbsp dark brown sugar
  • 3 tbsp tomato puree
  • 1 beef stock cube, crumbled
  • 100 ml boiling water
  • Salt and pepper to taste
  • 4 large tortillas
  • 250 g microwave rice pouch (Mexican-flavored)
  • 200 g fresh salsa
  • 400 g black beans, drained and rinsed
  • 125 g grated mozzarella

Instructions

  1. Heat sunflower oil in a large sauté pan over medium heat. Brown the beef mince for about 5 minutes using a wooden spoon.
  2. Add chopped onion, chili powder, smoked paprika, ground cumin, and dark brown sugar. Cook until the onion softens (about 5 minutes).
  3. Stir in tomato puree, crumbled beef stock cube, boiling water, salt, and pepper. Simmer covered on low heat for about 15 minutes until thickened.
  4. While the filling cooks, prepare tortillas and microwave rice according to package directions.
  5. Assemble by laying out tortillas and dividing the rice, beef mixture, salsa, black beans, and cheese among them. Roll tightly to enclose.
