  • 1 small butternut squash (peeled and chopped)
  • 2 sweet potatoes (peeled and chopped)
  • 1 yellow onion (sliced)
  • 3 cloves garlic (peeled)
  • 2 tablespoons olive oil
  • 400 ml full-fat coconut milk
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon chili powder
  • 1 teaspoon chili flakes
  • 750 ml vegetable or chicken stock
  • Salt and pepper to taste

Instructions

  1. Peel and chop the butternut squash and sweet potatoes into even pieces.
  2. In a large pot over medium heat, add olive oil and sauté onion until translucent (about 5 minutes). Add garlic and cook for another minute.
  3. Stir in the chopped butternut squash and sweet potatoes; mix well.
  4. Add spices (cumin, cinnamon, chili powder, chili flakes) along with salt and pepper; stir to coat the vegetables.
  5. Pour in the vegetable or chicken stock to cover the veggies completely. Bring to a boil, then reduce heat and simmer for about 20 minutes until tender.
  6. Remove from heat and blend until smooth using an immersion blender or regular blender. Stir in coconut milk (reserving some for garnish).
  7. Adjust seasoning if needed before serving hot.
