  • 1 tablespoon cooking oil
  • 1 pound chicken breast (cut into chunks)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons butter
  • 1/2 onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1 1/2 cups broccoli florets
  • 1 cup orzo pasta
  • 3 cups chicken stock
  • 1 1/2 cups cheese (parmesan and cheddar mix)
  • 1 tablespoon fresh lemon juice
  • Fresh herbs (for garnish)

Instructions

  1. Heat oil in a large pot over medium heat. Add chicken chunks seasoned with salt and pepper; cook until browned (5-7 minutes). Remove and set aside.
  2. In the same pot, melt butter and sauté onions until translucent. Add garlic and cook until fragrant.
  3. Stir in broccoli florets followed by orzo pasta; combine well.
  4. Gradually pour in chicken stock, bring to a boil, then reduce heat to low. Cover and simmer for about 10-12 minutes until orzo is al dente.
  5. Remove from heat; stir in cheese until melted. Finish with lemon juice and herbs before serving.
