- 1 pound chicken breast (cut into chunks)

- 1 teaspoon black pepper
- 2 tablespoons butter
- 1/2 onion (finely chopped)
- 4 garlic cloves (minced)
- 1 1/2 cups broccoli florets
- 1 cup orzo pasta
- 3 cups chicken stock
- 1 1/2 cups cheese (parmesan and cheddar mix)
- 1 tablespoon fresh lemon juice
- Fresh herbs (for garnish)
Instructions
- Heat oil in a large pot over medium heat. Add chicken chunks seasoned with salt and pepper; cook until browned (5-7 minutes). Remove and set aside.
- In the same pot, melt butter and sauté onions until translucent. Add garlic and cook until fragrant.
- Stir in broccoli florets followed by orzo pasta; combine well.
- Gradually pour in chicken stock, bring to a boil, then reduce heat to low. Cover and simmer for about 10-12 minutes until orzo is al dente.
- Remove from heat; stir in cheese until melted. Finish with lemon juice and herbs before serving.
