  • 1 cup boiling water
  • 3/4 cup boiling milk
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 1/4 cup all-purpose flour
  • 1/2 cup Dutch processed cocoa powder
  • 200g dark chocolate
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the chopped medjool dates with boiling water and let soak for about 10 minutes.
  3. In another bowl, whisk together softened butter, brown sugar, and vanilla. Add eggs one at a time, mixing well after each addition.
  4. In a separate bowl, mix all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  5. Combine soaked dates (with water) into the wet mixture, then gradually stir in dry ingredients until just combined.
  6. Pour batter into a greased baking dish and bake for about 25 minutes or until a toothpick comes out clean.
  7. For the chocolate toffee sauce, melt butter, brown sugar, cream, milk, dark chocolate, and salt in a saucepan over medium heat until smooth.
