Ingredients
- 1 pound ground beef sausage (mild or spicy)
- 3 medium carrots, diced
- 1 medium onion, diced
- 2–3 ribs celery, diced
- 1 medium red or orange bell pepper, chopped
- 7 cups low-sodium chicken broth
- 14.5 ounces petite diced tomatoes
- 1 ½ cups Ditali pasta (or other small pasta)
- 1 ½ cups fresh spinach, chopped
Instructions
- In a large pot over medium-high heat, crumble and brown the ground beef sausage until fully cooked. Transfer to a plate and set aside.
- In the same pot, add diced onions, carrots, celery, and bell pepper. Sauté for about 5-7 minutes until softened.
- Stir in minced garlic and Italian seasoning; cook for another minute until fragrant.
- Return the sausage to the pot, then add chicken broth and diced tomatoes with juice. Bring to a boil before reducing heat to low and simmering for 10-15 minutes.
- Add the pasta and cook until al dente, about 10 minutes.
- Stir in chopped spinach just until wilted, then serve hot topped with freshly grated cheese and basil.
