- 2 large egg whites (for meringue topping)
- 1/3 cup granulated sugar (for meringue)
Instructions
- Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
- Whisk together almond flour and powdered sugar; sift to remove lumps.
- In a separate bowl, beat egg whites and cream of tartar until soft peaks form; gradually add granulated sugar until stiff peaks form.
- Gently fold in the sifted dry ingredients and vanilla extract.
- Pipe small circles onto prepared sheets, then bake for about 20 minutes until shells lift easily from parchment. Allow to cool.
- For the lemon filling, whisk egg yolks, lemon juice, sugar, cornstarch, and salt over medium heat until thickened; stir in butter until melted.
- Once cooled, match macaron shells, pipe in lemon filling, and top with another shell.
- Optionally prepare meringue by beating egg whites and sugar until stiff peaks form; pipe on top of assembled macarons.
