Ingredients
- 10.5 cups water or organic unsalted vegetable broth
- 1 yellow onion, halved
- 2 celery ribs, halved
- 3 carrots, peeled
- 4 garlic cloves, peeled
- Salt to taste
- 1 cup pastina (or any small pasta)
- Grated Parmigiano for garnish (optional)
Instructions
- In a large pot, heat water or broth over high heat. Add the onion, celery, carrots, garlic, and salt. Bring to a boil.
- Once boiling, reduce heat to medium-low and simmer semi-covered for about 45 minutes until vegetables are soft.
- Transfer cooked vegetables to a blender with two ladles of broth and blend until smooth. Return to the pot.
- In a separate small pot, boil pastina according to package instructions until al dente.
- Serve by adding pastina to bowls and pouring hot broth over it. Garnish with grated Parmigiano if desired.
