  • 175 g dried apricots, chopped
  • 3 tablespoons apple juice (plus extra for brushing)
  • 175 g butter, softened
  • 175 g light brown sugar
  • 4 large eggs, beaten
  • 175 g plain flour
  • 225 g raisins
  • 225 g currants
  • 225 g cherries, halved
  • 1 tablespoon apricot jam, warmed
  • 500 g marzipan
  • 500 g ready-to-roll fondant
  • 30 ml apple juice

Instructions

  1. Preheat the oven to 160°C (320°F) and grease a 23×33 cm baking tray with parchment paper.
  2. Soak chopped dried apricots in 3 tablespoons of apple juice while preparing the batter.
  3. In a mixing bowl, cream together softened butter and light brown sugar until fluffy. Gradually add beaten eggs, mixing well.
  4. Sift in plain flour, then fold in soaked apricots, raisins, currants, and halved cherries until evenly mixed.
  5. Pour into the prepared tray and bake for about 1 hour or until a skewer comes out clean.
  6. Cool completely before brushing with apple juice and topping with warmed apricot jam, marzipan, and fondant.
