Ingredients
- 175 g dried apricots, chopped
- 3 tablespoons apple juice (plus extra for brushing)
- 175 g butter, softened
- 175 g light brown sugar
- 4 large eggs, beaten
- 175 g plain flour
- 225 g raisins
- 225 g currants
- 225 g cherries, halved
- 1 tablespoon apricot jam, warmed
- 500 g marzipan
- 500 g ready-to-roll fondant
- 30 ml apple juice
Instructions
- Preheat the oven to 160°C (320°F) and grease a 23×33 cm baking tray with parchment paper.
- Soak chopped dried apricots in 3 tablespoons of apple juice while preparing the batter.
- In a mixing bowl, cream together softened butter and light brown sugar until fluffy. Gradually add beaten eggs, mixing well.
- Sift in plain flour, then fold in soaked apricots, raisins, currants, and halved cherries until evenly mixed.
- Pour into the prepared tray and bake for about 1 hour or until a skewer comes out clean.
- Cool completely before brushing with apple juice and topping with warmed apricot jam, marzipan, and fondant.
