  • 1 tablespoon apple cider vinegar
  • Fresh dill, chopped
  • A handful of roasted pistachios, chopped
  • Sea salt and black pepper to taste
  • ½ tablespoon date syrup

Instructions

  1. Cook the Beets: Halve the beets and boil in salted water for about 20 minutes until tender. Drain and let cool.
  2. Prepare the Feta Mixture: While the beets are cooking, whisk together feta cheese, Greek yogurt, and lemon juice until smooth.
