  • 1.5 pounds potatoes (non-starchy potatoes, peeled and quartered)
  • 3 large carrots (peeled and cut into rounds)
  • 4 cups fish stock (homemade or store-bought)
  • 1 cup fresh dill (chopped)
  • 1 cup heavy whipping cream (8 ounces)
  • 4 tablespoons unsalted butter
  • 5 cups water
  • 1 tablespoon kosher salt (divided and to taste)
  • 1/4 teaspoon allspice
  • 1/2 teaspoon black pepper (to taste)

Instructions

  1. Gather and prepare all ingredients; clean and chop vegetables.
  2. In a large pot, melt butter over medium heat. Sauté leeks with half the salt until soft.
  3. Add potatoes, carrots, spices, salmon skins, water, and fish stock; bring to a boil.
