  • 4 cups romaine or cos lettuce, washed and dried
  • 1 large cucumber, chopped
  • 2 roma tomatoes, chopped
  • 1 red onion, cut into slices
  • 1 avocado, cut into slices
  • 1/3 cup pitted sliced kalamata or black olives (optional)
  • 2 tablespoons olive oil
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • 2 tablespoons water
  • 2 tablespoons red apple vinegar
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons dried basil
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • Cracked black pepper (to your liking)

Instructions

  1. Prepare the dressing by whisking together olive oil, lemon juice, water, apple vinegar, parsley, basil, garlic, oregano, salt, and pepper in a mixing bowl.
  2. Cook seasoned chicken in a skillet over medium heat for 6–7 minutes on each side until fully cooked. Allow to rest before slicing.
  3. In a large bowl or platter, layer romaine lettuce as the base followed by cucumber, tomatoes, red onion, avocado, and olives if using.
  4. Top with sliced chicken and drizzle with dressing. Toss gently before serving with lemon wedges.
