  • 2 medium oranges (about 400 g)
  • 150 g almond meal
  • 100 g shelled pistachios (finely ground)
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat the oven to 170°C (340°F). Grease a 23 cm (9-inch) springform pan and line the base with parchment paper.
  2. Boil the oranges in water for about 60 minutes. Drain and cool before pureeing until smooth.
  3. In a large bowl, whisk together the eggs and sugar until pale. Stir in the orange puree.
  4. In another bowl, mix almond meal, ground pistachios, baking powder, and salt. Fold into the wet mixture gently until just combined.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 50 to 60 minutes until set; a skewer should come out clean. If browning too quickly, tent with foil.
  7. Cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
