Ingredients
- 2 medium oranges (about 400 g)
- 150 g almond meal
- 100 g shelled pistachios (finely ground)
- 6 large eggs
- 200 g granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon fine sea salt
Instructions
- Preheat the oven to 170°C (340°F). Grease a 23 cm (9-inch) springform pan and line the base with parchment paper.
- Boil the oranges in water for about 60 minutes. Drain and cool before pureeing until smooth.
- In a large bowl, whisk together the eggs and sugar until pale. Stir in the orange puree.
- In another bowl, mix almond meal, ground pistachios, baking powder, and salt. Fold into the wet mixture gently until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50 to 60 minutes until set; a skewer should come out clean. If browning too quickly, tent with foil.
- Cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
