  • 1 ½ lbs chuck steak, cubed
  • 5 large onions
  • 23 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2½ cups beef broth
  • 1 white baguette, sliced
  • 1 ½ cups Gruyere cheese, grated
  • 3 tbsp Parmesan cheese, grated

Instructions

  1. Season the cubed chuck steak with coarse sea salt and black pepper.
  2. In a Dutch oven, heat olive oil over medium-high heat and sear the beef until browned on all sides; set aside.
  3. In the same pot, add butter and sliced onions with a pinch of salt. Cook over medium heat until caramelized (20–30 minutes).
  4. Stir in brown sugar, thyme, garlic, Worcestershire sauce, Dijon mustard, optional tomato paste, and flour; cook for another minute.
  5. Return seared beef to the pot with beef broth and bay leaves. Bring to a boil then simmer on low heat for about 90 minutes.
  6. Preheat the oven broiler. Brush baguette slices with olive oil; spread Dijon mustard if desired.
  7. Ladle stew into oven-safe bowls and top with baguette slices followed by Gruyere and Parmesan cheese.
  8. Broil until cheese is bubbly and golden (2–5 minutes). Garnish with fresh thyme before serving hot.
