Ingredients
- 1 ½ lbs chuck steak, cubed
- 5 large onions
- 2–3 tbsp olive oil
- 2 tbsp unsalted butter
- 2½ cups beef broth
- 1 white baguette, sliced
- 1 ½ cups Gruyere cheese, grated
- 3 tbsp Parmesan cheese, grated
Instructions
- Season the cubed chuck steak with coarse sea salt and black pepper.
- In a Dutch oven, heat olive oil over medium-high heat and sear the beef until browned on all sides; set aside.
- In the same pot, add butter and sliced onions with a pinch of salt. Cook over medium heat until caramelized (20–30 minutes).
- Stir in brown sugar, thyme, garlic, Worcestershire sauce, Dijon mustard, optional tomato paste, and flour; cook for another minute.
- Return seared beef to the pot with beef broth and bay leaves. Bring to a boil then simmer on low heat for about 90 minutes.
- Preheat the oven broiler. Brush baguette slices with olive oil; spread Dijon mustard if desired.
- Ladle stew into oven-safe bowls and top with baguette slices followed by Gruyere and Parmesan cheese.
- Broil until cheese is bubbly and golden (2–5 minutes). Garnish with fresh thyme before serving hot.
