- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels
- 1 small red bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1 ripe avocado, diced
- 1/4 cup shredded sharp cheddar cheese (optional)
- Fresh cilantro leaves, for garnish
- 1/4 cup plain Greek yogurt
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1 tablespoon honey or agave syrup
- 1–2 teaspoons chipotle chili powder
- 1 clove garlic, minced
Instructions

- Grill the marinated chicken for 6–7 minutes per side until fully cooked (165°F internal temperature). Let it rest before slicing.
