  • 1 cup cherry tomatoes, halved

  • 1 cup corn kernels
  • 1 small red bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1 ripe avocado, diced
  • 1/4 cup shredded sharp cheddar cheese (optional)
  • Fresh cilantro leaves, for garnish
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon honey or agave syrup
  • 12 teaspoons chipotle chili powder
  • 1 clove garlic, minced

Instructions

  1. Marinate chicken with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. Let it sit for at least 15 minutes.
  2. Grill the marinated chicken for 6–7 minutes per side until fully cooked (165°F internal temperature). Let it rest before slicing.
  3. In a large bowl, combine mixed greens, cherry tomatoes, black beans, corn, diced bell pepper, red onion, and avocado.
  4. For the dressing: whisk together Greek yogurt, lime juice, olive oil, honey/agave syrup, chipotle chili powder, minced garlic, salt, and pepper.
