Instructions

  1. Plump the fruits: Soak raisins and currants in boiling water until softened.
  2. Activate the yeast: Combine lukewarm milk, yeast, and a tablespoon of sugar; let froth for about 5–10 minutes.
  3. Combine dry ingredients: In a large bowl, mix flour, ground almonds, spice mix, and remaining sugar.
  4. Mix wet ingredients: Add activated yeast mixture, softened butter, vanilla extract, and eggs to dry ingredients; combine for a smooth dough.
  5. Incorporate fruits: Drain soaked fruits and stir them along with candied citrus peel into the dough.
  6. Knead: Knead until smooth and elastic; let rise in a warm place covered for 1–2 hours.
  7. Preheat oven to 350°F (180°C) and prepare a baking sheet with parchment paper.
  8. Shape cookies: Roll dough into balls weighing about 2 ounces each; space them on the baking sheet.
