  • 2¼ cups all-purpose flour (270 grams)
  • 1 tablespoon ground ginger (9 grams)
  • 1 teaspoon ground cinnamon (3 grams)
  • 1 teaspoon apple pie spice (3 grams)
  • ¾ teaspoon ground cloves
  • Icing and sprinkles (for decorating)

Instructions

  1. Cream together unsalted butter, dark brown sugar, granulated sugar, and both types of salt in a stand mixer until light and fluffy.
  2. Add the egg and molasses; mix until well combined.
  3. In another bowl, whisk together all-purpose flour, ground ginger, ground cinnamon, apple pie spice, and ground cloves.
  4. Gradually mix the dry ingredients into the wet mixture on low speed until just combined.
  5. Divide the dough in half, roll each half out on parchment paper to ⅜-inch thickness, then refrigerate for at least 2 hours.
  6. Preheat the oven to 350°F and cut chilled dough into desired shapes. Bake for 10–12 minutes or until edges begin to darken.
