Ingredients

  • 1 1/3 cups water
  • 1/2 cup honey (or maple syrup)
  • 2 tablespoons molasses
  • 2-inch piece of fresh ginger (thinly sliced)
  • 2 cinnamon sticks
  • 1 teaspoon pure vanilla extract
  • Ice
  • 2 ounces (1/4 cup) lemon juice
  • 1 ounce (2 tablespoons) coffee syrup (substitute for coffee liqueur)
  • 1 ounce (2 tablespoons) gingerbread syrup (or more, to taste)
  • 12 ounces (24 tablespoons) heavy cream
  • Cinnamon and sugar mixture for rimming the glass
  • Mini gingerbread cookies
  • Ground cinnamon or nutmeg for dusting

Instructions

  1. In a saucepan, combine water, honey (or maple syrup), molasses, sliced ginger, cinnamon sticks, and vanilla extract. Bring the mixture to a boil over medium heat.
  2. Reduce heat and let it simmer for about 5 minutes until it thickens slightly.
  3. Remove from heat and allow it to cool before straining out solids.
  4. Fill a cocktail shaker with ice.
  5. Add lemon juice, coffee syrup, and 1 ounce of your homemade gingerbread syrup.
  6. Shake well until chilled.
  7. Rim your serving glass with the cinnamon-sugar mixture by dipping it into water first then into the mixture.
  8. Strain the shaken cocktail into the prepared glass over fresh ice.
  9. Top with heavy cream by gently pouring it over the back of a spoon for an elegant layered effect.
  10. Garnish with mini gingerbread cookies and dust with ground cinnamon or nutmeg.
