  • 7/8 cup chilled heavy cream
  • 3 tablespoons confectioners' sugar
  • 3/4 teaspoon vanilla extract
  • Coffee-flavored fruit juice alternative
  • 1/2 cup chilled mascarpone cheese

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. Combine flour and instant espresso in a mixing bowl. In another bowl, beat egg whites until frothy, then gradually add sugar until stiff peaks form.
  3. Whisk together egg yolks and whole eggs until thickened; fold in dry mixture gently.
  4. Fold the beaten egg whites into the yolk mixture carefully.
  5. Spread batter evenly on the baking tray; bake for about 8 minutes or until lightly golden.
  6. For the filling, whip heavy cream until soft peaks form, then mix in confectioners' sugar and vanilla; fold in mascarpone gently.
  7. Once the sponge is cool, spread the cream filling over it evenly and roll tightly from one end.
  8. Wrap in plastic wrap and chill before serving; dust with cocoa powder just before slicing.
