- 4–5 cups flour

- 14 oz spinach (finely chopped)
- 1 onion (finely diced)
- 7 oz vegan Feta cheese (crumbled)
- 1 tablespoon red paprika flakes
- 1 teaspoon black pepper
- 1 teaspoon tomato paste
- salt if needed
Instructions
- In a mixing bowl, combine warm water and dry yeast (if using). Let sit for 5 minutes until frothy. Gradually mix in flour and salt until a soft dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place in a bowl, cover, and let rise in a warm place for 30 minutes.
- Meanwhile, prepare the filling by mixing chopped spinach, diced onion, crumbled vegan Feta cheese, red paprika flakes, black pepper, tomato paste, and salt in another bowl.
- Once the dough has risen, divide it into equal portions and roll each into thin circles.
- Place filling on one half of each circle, fold over to seal edges. Cook on medium heat in a non-stick frying pan for about 3-4 minutes on each side until golden brown.
