  • 3 cups cooked pasta (rotini or penne)
  • 1 ½ cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup red onion, thinly sliced
  • ¾ cup kalamata olives, sliced
  • 1 cup feta cheese, crumbled
  • ¼ cup olive oil
  • 2 tablespoons red apple vinegar
  • Juice of half a lemon

Instructions

  1. Cook the pasta according to package instructions in salted water until al dente. Drain and rinse under cold water.
  2. In a bowl, whisk together olive oil, red apple vinegar, Dijon mustard, oregano, garlic powder, salt, black pepper, and lemon juice.
  3. In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumber, red bell pepper, red onion, kalamata olives, and feta cheese.
  4. Pour the dressing over the salad mixture and toss gently until evenly coated.
  5. Chill for at least 30 minutes before serving. Garnish with chopped parsley if desired.
