Ingredients
- 3 cups cooked pasta (rotini or penne)
- 1 ½ cups cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red bell pepper, diced
- ½ cup red onion, thinly sliced
- ¾ cup kalamata olives, sliced
- 1 cup feta cheese, crumbled
- ¼ cup olive oil
- 2 tablespoons red apple vinegar
- Juice of half a lemon
Instructions
- Cook the pasta according to package instructions in salted water until al dente. Drain and rinse under cold water.
- In a bowl, whisk together olive oil, red apple vinegar, Dijon mustard, oregano, garlic powder, salt, black pepper, and lemon juice.
