  • 1 cup carrots, sliced
  • 1 cup romaine or green leaf lettuce, shredded
  • 1 cup cucumber, sliced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt & black pepper, to taste
  • 12 tbsp ranch dressing or yogurt-based dressing

Instructions

  1. Season the chicken breast with salt, pepper, and olive oil. Grill over medium-high heat for 6-8 minutes per side until cooked through. Let rest before slicing.
  2. Heat olive oil in a frying pan. Add carrots, garlic powder, oregano, salt, and pepper. Sauté for 5-7 minutes until tender but crisp.
  3. Prepare the romaine lettuce and cucumber by washing and slicing them.
  4. In a large bowl, layer the shredded lettuce as the base. Top with sliced chicken, sautéed carrots, and cucumber rounds.
  5. Drizzle your choice of dressing over the top and garnish with fresh herbs or lemon juice as desired.
