  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 1 Pineapple
  • 1 tbsp olive oil (for pineapple)
  • 5 cups chopped romaine lettuce
  • 1/2 red onion
  • 1/2 cucumber
  • 1 cup cherry tomatoes
  • 1 avocado
  • 1/4 cup extra virgin olive oil (for dressing)
  • 1/4 cup lime juice
  • 2 tbsp honey
  • 1 tsp garlic powder (for dressing)
  • 1 tsp pink sea salt (for dressing)
  • 1/2 tsp black pepper (for dressing)
  • 1/2 tsp red pepper flakes (for dressing)

Instructions

  1. Cut the pineapple into rings and drizzle with olive oil. Season chicken breasts with olive oil, salt, pepper, thyme, garlic powder, and red pepper flakes.
  2. Preheat the grill on medium-high heat for 10 minutes. Grill chicken for 7 minutes on each side and pineapple for 3-4 minutes until caramelized.
  3. While grilling, chop romaine lettuce, slice onion and cucumber, halve cherry tomatoes, and prepare avocado.
  4. For the dressing, mix olive oil, lime juice, honey, garlic powder, salt, pepper, and red pepper flakes in a bowl until well combined.
  5. Once cooked, slice the chicken and layer all ingredients in a serving bowl. Drizzle the dressing over the top and toss gently before serving.
