- 640g cooked jasmine rice or sushi rice
- 600g boneless skinless chicken thighs
- 200g diced fresh pineapple
- 155g cooked edamame beans
- 1 julienned carrot
- 140g diced avocado
- 3 spring onions (green parts only), sliced
- 2 baby cucumbers, halved and sliced
- 3 tablespoons soy sauce
- 3 tablespoons maple syrup
- 1 tablespoon apple vinegar
- 1 tablespoon tomato paste
- 120ml pineapple juice
- 2 teaspoons sriracha
- 2 teaspoons sesame oil
- 4 tablespoons light mayo
Instructions
- In a small bowl, mix light mayo and sriracha with water to reach desired consistency for the drizzle.
- Whisk together soy sauce, maple syrup, vinegar, pineapple juice, tomato paste, sesame oil, and sriracha in another bowl.
- Heat a large frying pan over medium-high heat. Cook chicken with garlic, ginger, and onion powder until golden brown. Remove from pan.
- Add sauce to the same pan; let it bubble lightly before returning the chicken to cook until caramelized.
- Assemble bowls with rice as the base topped with sticky chicken and your choice of veggies and fruits.
- Drizzle spicy mayo over each bowl before serving.
