  • 1 pound boneless skinless chicken thighs
  • 1 cup fresh pineapple (diced)
  • 1 cup cooked edamame beans
  • 1 medium avocado (diced)
  • 2 tablespoons toasted sesame seeds
  • 2 cloves grated garlic
  • 1 tablespoon grated ginger
  • 1 teaspoon onion powder
  • 1/4 cup soy sauce
  • 2 tablespoons maple syrup
  • 2 tablespoons apple vinegar
  • 2 tablespoons tomato paste (puree)
  • 1/4 cup pineapple juice
  • 1 tablespoon sriracha
  • 1 tablespoon sesame oil
  • 1/2 cup light mayo
  • 1 tablespoon sriracha (for mayo)
  • 1 tablespoon water (optional)

Instructions

  1. Cook the jasmine rice according to package instructions and set aside.
  2. In a mixing bowl, combine chicken thighs with grated garlic, grated ginger, onion powder, soy sauce, maple syrup, apple vinegar, tomato paste, pineapple juice, sriracha, and sesame oil. Let marinate for at least 10 minutes.
  3. Heat a skillet over medium heat and cook the marinated chicken for about 8–10 minutes until fully cooked and slightly caramelized.
  4. Assemble your poke bowl by placing rice at the base and topping it with cooked edamame beans, diced pineapple, sliced avocado, and any additional vegetables you prefer.
  5. In a small bowl, mix light mayo with sriracha and water if desired. Drizzle over your assembled poke bowls.
  6. Finish off by sprinkling toasted sesame seeds over each bowl before serving.
