- 8 ounces rotini noodles
- 3/4 cup chopped English cucumber
- 3/4 cup shredded carrot
- 1 yellow bell pepper (chopped)
- 1/2 cup diced red onion
- 5 ounces sliced olives
- 14 ounces cherry tomatoes (halved)
- 3–4 ounces turkey pepperoni (quartered)
- 6 ounces fresh mozzarella (cubed)
- 2 ounces fresh basil (thinly sliced)
- 1/3 cup light Caesar dressing
- 1/3 cup light Greek dressing
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4–1/2 cup shredded parmesan cheese
Instructions
- Cook rotini noodles in boiling water according to package instructions until al dente. Drain and rinse under cold water.
- In a mixing bowl, combine the cooked pasta with cucumber, carrot, bell pepper, red onion, olives, tomatoes, turkey pepperoni, mozzarella, and basil.
- Drizzle both dressings over the salad and season with salt and black pepper to taste.
- Toss well to combine all ingredients. Adjust seasoning if necessary.
- Chill in the refrigerator until ready to serve.
