  • 1 cup boiling water
  • 1 1/2 tsp canola oil
  • 1 1/2 cups red onion, minced
  • 1 lb ground turkey
  • 1 tsp lemon pepper seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 cups swiss chard, finely chopped
  • Juice from 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss diced butternut squash with canola oil, nutmeg, cinnamon, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  4. Prepare couscous by combining it with boiling water in a bowl; cover and let sit for 5 minutes.
  5. Sauté minced red onion in canola oil until translucent; add ground turkey and seasonings, cooking until browned.
  6. Stir in chopped swiss chard until wilted; combine with roasted squash and fluffed couscous.
  7. Drizzle lemon juice over everything before serving.
