- 1 cup boiling water
- 1 1/2 tsp canola oil
- 1 1/2 cups red onion, minced
- 1 lb ground turkey
- 1 tsp lemon pepper seasoning
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 cups swiss chard, finely chopped
- Juice from 1 lemon
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss diced butternut squash with canola oil, nutmeg, cinnamon, salt, and pepper.
- Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
- Prepare couscous by combining it with boiling water in a bowl; cover and let sit for 5 minutes.
- Sauté minced red onion in canola oil until translucent; add ground turkey and seasonings, cooking until browned.
- Stir in chopped swiss chard until wilted; combine with roasted squash and fluffed couscous.
- Drizzle lemon juice over everything before serving.
