  • 12 chicken breasts
  • 2 medium potatoes, cut into wedges
  • 1 small sweet potato (optional), cut into fries
  • 2 medium tomatoes, chopped
  • 1 cucumber, chopped
  • 1 cup plain yogurt
  • 1 tbsp olive oil
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • Salt & pepper to taste
  • 1 tsp paprika
  • Salt & pepper to taste

  • Optional: splash of olive oil or vinegar
  • 1 tsp dried mint or dill
  • 1 garlic clove, minced

Instructions

  1. Preheat your oven to 200C (400F).
  2. Marinate chicken breasts in olive oil, oregano, garlic powder, chili flakes, salt, and pepper. Bake for 20-25 minutes.
  3. Toss potato wedges with olive oil, paprika, salt, and pepper; roast for 25-30 minutes alongside the chicken.
  4. Combine chopped tomatoes and cucumber in a bowl; season with salt and pepper. Optionally add olive oil or vinegar.
  5. Mix yogurt with dried mint or dill, minced garlic, salt, and pepper; chill until serving.
  6. Serve roasted chicken with potatoes, tomato salad, and yogurt dip.
