Ingredients
Scale
- 6 large organic lemons
- 1 liter of neutral spirit (such as vodka)
- 400 grams of sugar
- 1.2 liters of water
Instructions
- Wash the lemons thoroughly and use a vegetable peeler to remove the zest, avoiding the white pith.
- Place the zest in a glass bottle and cover it with the neutral spirit. Seal tightly and let infuse in a cool, dark place for one month, shaking gently every few days.
- After a month, strain the zest from the infused non-alcohol using a fine mesh strainer.
- In a saucepan, heat water and sugar over medium heat until dissolved; let cool completely.
- Combine the cooled syrup with the infused non-alcohol and pour into clean glass bottles. Seal and rest for about ten days before serving.
