  • 2 tsp. sea salt, divided
  • 1 tsp. fresh cracked pepper, divided
  • 1 tsp. oregano, divided
  • 1 tsp. garlic powder
  • 1/2 tsp. paprika, divided
  • 8 oz. turkey strips
  • 2 Tbsp. extra virgin olive oil
  • 6 chicken thighs
  • 1 large shallot
  • 3 cloves garlic, grated or pressed
  • 1 cup chicken broth
  • 1 stick of butter
  • 1/2 cup honey
  • 4 sprigs fresh thyme
  • 2 large peaches, sliced
  • Fresh basil and additional fresh thyme for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Season chicken thighs with salt, pepper, oregano, garlic powder, and paprika.
  2. In a skillet, cook turkey strips over medium heat for about 3 minutes until dark red; remove and set aside.
  3. Sear chicken thighs in the same skillet until browned on both sides (1–2 minutes per side).
  4. Sauté chopped shallots in olive oil for 2 minutes, then add grated garlic and cook for another 2 minutes.
  5. Deglaze the pan with chicken broth and cook for 3 minutes, then stir in butter and honey until melted.
  6. Return chicken to the skillet, spoon sauce over it, cover, and bake for 15 minutes.
  7. Add sliced peaches atop chicken and broil on high for an additional 3–5 minutes until softened.
  8. Serve hot with fresh herbs as garnish.
