Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup semi-sweet chocolate chips
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon vanilla extract
  • 1 cup whipped cream
  • 2 maraschino cherries
  • 1/4 cup chocolate shavings (or chopped chocolate)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a springform pan and line the bottom with parchment paper.
  2. For the brownie base: Mix melted butter and sugar, then stir in eggs and vanilla. Add flour, cocoa powder, salt, and baking powder; fold in chocolate chips. Pour into the prepared pan and bake for 20–25 minutes. Cool completely.
  3. For the cheesecake filling: Beat cream cheese until smooth. Mix in sugar and vanilla, then add eggs one at a time. Stir in sour cream and heavy cream until smooth. Pour over cooled brownie layer.
  4. Lower oven to 325°F (163°C) and bake for 55–60 minutes until slightly jiggly in the center. Turn off the oven and leave cheesecake inside for an hour before chilling for at least four hours.
  5. For hot fudge sauce: Melt chocolate chips, heavy cream, and butter over low heat; stir in vanilla.
  6. Assemble: Remove cheesecake from pan, drizzle with hot fudge, top with whipped cream, chocolate shavings, and cherries.
