  • 1 tbsp olive oil
  • 1 onion, sliced
  • 4 carrots, cut into chunks
  • 4 gold potatoes, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Season the chuck roast with salt and pepper.
  2. In a hot skillet, sear the roast on each side for 2–3 minutes until browned.
  3. Layer sliced onion, carrot chunks, and quartered potatoes in the slow cooker.
  4. Sprinkle minced garlic over the vegetables and add dried thyme and bay leaf.
  5. Place the seared roast on top of the vegetables.
  6. Pour beef broth and Worcestershire sauce around the roast.
  7. Cover and cook on low for 8 hours or high for 4–5 hours.
  8. Remove the bay leaf before serving; let the roast rest for 10 minutes before slicing.
