  • 2 cups powdered sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons water
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a medium bowl, whisk together oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, combine melted butter, pumpkin puree, sugar, molasses, and vanilla. Add eggs and mix until smooth.
  4. Fold in the dry mixture until just combined.
  5. Drop dough by heaping tablespoons onto prepared sheets.
  6. Bake for 10 to 12 minutes until lightly browned. Allow cooling before icing.
  7. For the icing: whisk powdered sugar, cinnamon, water, and vanilla until smooth; frost cooled cookies.
