- 15 oz beans (black or white, drained and rinsed)
- 6 cups chicken broth
- 28 oz diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 3/4 cup ditalini pasta
Instructions
- Heat olive oil in a large Dutch oven over medium heat. Add the sausage and cook for 5–7 minutes, breaking it into bite-sized pieces until browned.
- Stir in the chopped onion, carrot, zucchini, and minced garlic. Season with salt and pepper, cooking for about 10 minutes until softened.
- Pour in the chicken broth and diced tomatoes; stir in the beans, basil, and oregano. Bring to a boil.
- Add ditalini pasta, reduce heat to medium, and let simmer for 15 minutes until the pasta is tender.
