  • Sea salt and black pepper, to taste
  • 15 oz beans (black or white, drained and rinsed)
  • 6 cups chicken broth
  • 28 oz diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 3/4 cup ditalini pasta

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Add the sausage and cook for 5–7 minutes, breaking it into bite-sized pieces until browned.
  2. Stir in the chopped onion, carrot, zucchini, and minced garlic. Season with salt and pepper, cooking for about 10 minutes until softened.
  3. Pour in the chicken broth and diced tomatoes; stir in the beans, basil, and oregano. Bring to a boil.
  4. Add ditalini pasta, reduce heat to medium, and let simmer for 15 minutes until the pasta is tender.
  5. Serve hot, garnished with fresh herbs or cheese if desired.
