Instructions
- In a mixing bowl, combine fluffed bread crumbs with water and let soak for 5 minutes.
- Add ground beef, Parmesan cheese, egg, Italian seasoning, salt, and pepper; mix until just combined. Shape into 1-inch meatballs.
- In a large pot over medium heat, sauté carrots, celery, onion, and garlic in olive oil for about 5-7 minutes.
- Add Italian seasoning, salt, bay leaf, red pepper flakes (if desired), and chicken broth; bring to a boil.
- Drop in meatballs; reduce heat and simmer for 20 minutes or until cooked through.
- Stir in pasta and cook according to package instructions; add spinach during the last minute to wilt.
