Ingredients
- 2 large onions
- 2 medium carrots
- 3 Yukon gold potatoes
- 2 cloves garlic
- 1 lb cubed beef (or protein alternative)
- 1 tbsp butter
- 5 cups water or stock
- 8 oz Japanese curry roux
- 1 red apple (Fuji or Honeycrisp)
Instructions
- Chop vegetables into large chunks and mince the garlic.
- Soak potato chunks in warm water for 15 minutes.
- Season beef with salt and let sit for 10 minutes.
- Sear beef in a pot over medium heat until browned, then remove.
- In the same pot, sauté onions in butter until caramelized.
- Add garlic, then stir in potatoes and carrots before returning beef to the pot.
- Pour in water and optional grated apple, honey, ketchup, and Worcestershire sauce; stir well.
- Cover and simmer on medium-low for 15 minutes; skim off any scum.
- Check potato doneness; add curry roux cubes slowly to thicken.
- Simmer uncovered for another 15 minutes while stirring frequently.
- Serve hot over bowls of rice.
