  • 1 tsp cornstarch (for cream cheese filling)
  • 3/4 cup powdered sugar (for cream cheese filling)
  • 1 1/2 to 2 1/2 tsp milk (for cream cheese filling)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease it lightly.
  2. In a mixing bowl, combine the dry ingredients: flour, brown sugar, granulated sugar, baking powder, and salt.
  3. In another bowl, whisk together the wet ingredients: melted butter, vegetable oil, egg, Greek yogurt, and vanilla extract until smooth.
  4. Fold the wet mixture into the dry ingredients until just combined. Gently fold in blueberries tossed with flour.
  5. Prepare the cream cheese filling by mixing softened cream cheese with granulated sugar, cornstarch, powdered sugar, and milk until creamy.
  6. Fill muffin cups halfway with batter, add a dollop of cream cheese filling on top, then cover with more muffin batter and sprinkle remaining blueberries on top.
  7. Bake for about 22 minutes or until golden brown and a toothpick comes out clean.
