- 1/2 cup pumpkin seeds
- 6 cups mixed salad greens
- 2 cups frisée leaves
- 1–2 diced apples or pears
- 2 sliced avocados
- 2 cups pomegranate seeds
- 1/3 cup honey or maple syrup
- 1/4 teaspoon chipotle powder
- 1/3 cup virgin olive oil
- 1/4 cup apple cider vinegar
- 2 teaspoons dijon mustard
- 1 tablespoon fig jam
- 2 teaspoons orange peel zest
- 2 tablespoons fresh orange juice
Instructions
- Preheat oven to 350°F (175°C). Spread walnuts and pumpkin seeds on a baking sheet and roast for 10-12 minutes until golden.
- In a mixing bowl, whisk together honey or maple syrup, chipotle powder, olive oil, apple cider vinegar, dijon mustard, fig jam, orange zest, and orange juice until creamy.
- In a large salad bowl, mix salad greens and frisée. Add diced apples or pears and sliced avocados.
- Top with roasted walnuts, pumpkin seeds, and pomegranate seeds.
- Drizzle the dressing over the salad just before serving and toss gently.
