- 1 1/4 cup All-Purpose Flour
- 3/4 cup Cake Flour
- 1 tsp Corn Starch
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup Cold Unsalted Butter, cubed
- 1/2 cup Light Brown Sugar, packed
- 1/4 cup White Granulated Sugar
- 1 Large Egg
- 1 Egg Yolk
- 2 cups Chocolate Chips (milk or semi-sweet)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking powder, baking soda, and salt; set aside.
- In a stand mixer, cream cold butter until fluffy. Gradually add brown sugar and white sugar; mix until well combined.
- Add the egg and egg yolk; mix until just combined.
- Slowly incorporate the dry ingredients into the wet mixture until fully combined. Fold in chocolate chips.
- Portion dough into six tall cookies (about 5.7 oz each) on a lined cookie sheet.
