  • 1 bunch green onions, divided
  • 1 garlic clove, thinly sliced
  • 1 (3-inch) piece ginger, peeled, or 2 teaspoons ground ginger, divided
  • 2 Tablespoons soy sauce, plus more to taste
  • 1 1/2 teaspoons rice or white vinegar
  • 1 Tablespoon brown sugar
  • 1 teaspoon Kosher salt, divided
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons cornstarch
  • Sriracha Hot Sauce or Chili Crunch (optional)

Instructions

  1. In a large saucepan, heat chicken stock over medium-high heat. Add white parts of green onions, sliced garlic, and ginger.
  2. Stir in soy sauce, rice vinegar, brown sugar, and salt. Bring to a boil.
  3. In a mixing bowl, combine ground beef with green onion tops, grated ginger, soy sauce, sesame oil, and cornstarch. Form into 1-inch meatballs.
  4. Add meatballs directly to boiling broth; reduce heat and simmer for 5 minutes.
  5. Stir in bok choy and wonton wrappers; cook for an additional 8 minutes.
  6. Serve hot with garnishes like green onions or Sriracha.
