- 1 tbsp butter
- 1 onion (or 2 shallots)
- 1 large carrot
- 2 stalks celery
- 1 clove garlic
- 4 sprigs thyme (or ½ tsp dried thyme)
- 6 cups turkey or chicken stock
- ½ cup giant/pearl couscous
- 2 cups cooked turkey or chicken
- 2 bay leaves
- Salt and pepper to taste
- 1 tbsp chopped parsley
Instructions
- In a large pot, heat olive oil and butter over low heat. Add chopped onion, celery, carrot, and minced garlic along with thyme leaves. Sauté for about 5 minutes until softened.
- Pour in the turkey or chicken stock along with cooked turkey pieces and bay leaves. Bring to a boil, then season with salt and pepper.
- Stir in the giant couscous and reduce heat to medium. Cook for about 10 minutes until couscous is tender.
- Remove from heat, discard bay leaves, and sprinkle with chopped parsley before serving hot.
