  • ¼ teaspoon salt
  • 2 bay leaves
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced carrots, onion, celery, and minced garlic until softened (about 5 minutes).
  2. Stir in black pepper, parsley, thyme, and bay leaves.
  3. Add chicken breasts and pour in chicken broth to cover ingredients.
  4. Cook: Seal Instant Pot for 15 minutes on high pressure or simmer in a large pot for about 45 minutes until chicken is cooked through.
  5. Shred the chicken using two forks and return to the pot along with orzo pasta.
  6. Stir in fresh lemon juice and simmer for an additional 10 minutes until orzo is tender.
