  • 1 tbsp fresh ginger (grated)
  • Zest of 1 lemon
  • 1/4 cup lemon juice (freshly squeezed)
  • 2 tbsp honey
  • 1 tbsp soy sauce (gluten-free if needed)
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup jasmine or basmati rice
  • 1 cup coconut milk
  • 1/2 cup water
  • 1/2 tsp salt
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup diced red onion
  • 1 tbsp lime juice
  • Fresh cilantro, chopped (optional)

Instructions

  1. Rinse rice under cold water until clear. In a pot, combine rinsed rice, coconut milk, water, and salt; bring to a boil. Reduce heat, cover, and simmer for 15–20 minutes until fully cooked.
  2. In a bowl, mix grated ginger, lemon zest, lemon juice, honey, soy sauce, olive oil, salt, and pepper. Marinate chicken pieces in this mixture for at least 10 minutes.
  3. Heat a skillet over medium-high heat and add the marinated chicken along with any remaining marinade. Cook for about 8–10 minutes until golden brown and cooked through.
  4. For the salsa: Combine diced pineapple, diced mango, diced red onion, lime juice, cilantro (if using), salt, and pepper in another bowl.
  5. Serve chicken over coconut rice topped with pineapple mango salsa.
