  • 3 large egg yolks

  • 1 cup fresh raspberries
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 400°F (200°C). In a saucepan, combine water, butter, and salt over medium heat until the butter melts.
  2. Remove from heat and stir in flour until a dough forms. Return to heat briefly to dry out.
  3. Allow the dough to cool slightly before adding eggs one at a time, mixing well after each addition.
  4. Pipe long lines of choux pastry onto a lined baking sheet. Bake for about 20-25 minutes until puffed and golden brown.
  5. For the filling, whisk together heavy cream, lemon juice, zest, sugar, cornstarch, milk, egg yolks, and vanilla extract. Cook until thickened.
  6. Once cooled, fill eclairs with lemon cream and top with powdered sugar mixed with lemon juice and fresh raspberries.
