  • 6 oz spinach (or 6-oz of frozen spinach, thawed, drained, and liquid squeezed out)
  • 2 Tbsp extra virgin olive oil
  • 5 cloves garlic (1 tablespoon, minced)
  • 8 oz cream cheese (broken up into six chunks)
  • 1/2 cup heavy cream
  • 3/4 cup grated parmesan cheese
  • 3/4 cup white cheddar cheese
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp garlic powder
  • 2 Tbsp Panko bread crumbs
  • 2 Tbsp parmesan cheese
  • 1/2 Tbsp unsalted butter (melted)

Instructions

  1. Heat olive oil in a pan over medium heat. Sauté minced garlic until fragrant. Add spinach and wilt.
  2. In a mixing bowl or food processor, combine sautéed spinach and cream cheese chunks. Gradually mix in heavy cream.
  3. Stir in grated parmesan and white cheddar cheeses along with salt, black pepper, and garlic powder until well combined.
  4. Transfer to a baking dish; top with Panko bread crumbs and extra parmesan. Drizzle melted butter on top.
  5. Bake at 375°F (190°C) for about 10 minutes or until bubbly and golden brown.
