  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1 tablespoon lime zest
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh or canned cherry pie filling
  • 1/4 cup chopped pistachios
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 8 minutes.
  3. Beat cream cheese until smooth. Gradually add sugar, then mix in sour cream and heavy cream.
  4. Add eggs one at a time, mixing well after each addition. Stir in lemon zest, lime zest, lemon juice, lime juice, and vanilla extract.
  5. Pour filling over crust and smooth out the top. Bake for 50-60 minutes until set.
  6. Let cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours or overnight.
  7. Before serving, top with cherry pie filling and sprinkle chopped pistachios.
