Description

  • 1 medium red onion, thinly sliced

  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup (optional)
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Fresh basil or dried oregano for garnish

Instructions

  1. Slice the tomatoes into rounds or wedges and thinly slice the red onion into half-moons.
  2. In a mixing bowl, combine olive oil, apple cider vinegar, Dijon mustard, honey or maple syrup (if using), salt, and pepper. Whisk until emulsified.
  3. Add the sliced tomatoes and onions to the dressing; toss gently to coat.
  4. Sprinkle chopped basil or oregano and toss again lightly.
  5. Let the salad sit at room temperature for about 30 minutes to enhance flavors before serving.
